A month or so ago I made my first crockpot chicken, and was delighted how easy and delicious it was, basically chicken, salsa and some seasoning. So I started to think about what else I could do that would be similar, and it dawned on me to think tropical.

Crockpot Shredded Coconut Orange Chicken
Makes 10 half cup servings

Ingredients
2 lbs chicken breast
2 tbsp coconut oil
3 cloves garlic
2 tbsp unsweetened shredded coconut
1 cup vegetable broth
2 tbsp True Citrus Orange Ginger seasoning (can substitute 1/8 cup unsweetened orange juice with 1/2 tsp ground ginger)
Directions
1) Trim any fat from chicken. Add it to crockpot with other ingredients.
2) Turn crockpot on high heat, and cook for 3-3.5 hours.
3) When cooked, shred chicken with fork. Add salt to taste.
Serve & enjoy!
